Participate in the purchase of an animal.

Principle: we offer a specific animal on our own website. The animal can be recognized by the number on its ear. You then buy shares in this animal. For example, meat packages weighing four or more kilograms or steak packages, etc. The animal is slaughtered only when all the meat has been sold as packages – not before that. Delivery takes at least two weeks from order to delivery.

Through Crowdbutching unnecessary meat, that is actually thrown away in the end, is not produced. In addition, the smallest slaughterhouses are still for the benefit of the whole animal. The skins go to the tanneries. Organs end up in dog food. Bone residue can be turned into glue, etc.

Angus Bullstar cattle are close to the slaughter point, from a pasture to the other end of the village. They eat grass and grass silage from our own culture. Slaughtering between the ages of 24 months and 36 months is done almost directly on pasture.

T Bone Steak

T-Bone is the younger brother of Porterhouse, a powerful piece of meat that combines two steaks into a single cut: a piece of fillet, about three inches thick, and a piece of rump steak tied to the T-shaped bone. A steak for the celebration evenings.

Rump steak (Roast beef)

The ribeye is the back part, in the direction of the neck, a part that tends anatomically towards strong fat deposits and, therefore, also forms the fatty eye by which the entrecote can be recognized. Longissimus Dorsi and Spinalis dorsi, also characteristic muscles in the entrecote, are considered to be some of the most sensitive and, at the same time, the most marbled meat muscles.

When the animal is reared freely on the pasture and in a friendly manner, the result is this Angus Ribeye. In terms of taste, this means tenderness. It is very important that by having a considerable amount of fat in the meat, the entrecote ensures a fast saturation. Quantities of 80g/person are absolutely sufficient for this type of meat. Not suitable as a 300 grams steak.

Rib eye steak (Antricot)

The ribeye is the back part, in the direction of the neck, a part that tends anatomically towards strong fat deposits and, therefore, also forms the fatty eye through which the antricot can be recognized. Longissimus Dorsi and Spinalis dorsi, also characteristic muscles in the apricot, are considered to be some of the most sensitive and, at the same time, the most marbled meat muscles.

Pulp

The pulp, as a link between the back and the leg, does not play a supporting role in the musculoskeletal system of cattle – and this always means very little connective tissue. This explains the tenderness of the pulp, which, in terms of texture, has almost the same level of quality as the noble cuts from the back.

The special feature of the pulp – its particularly lean structure – does not apply to Wagyu cattle, which, for genetic reasons, store fat in all areas of muscle.

Picanha (in germana “Tafelspitz”)

It is a traditional German dish – traditionally served as boiled meat with horseradish sauce. And as it is advisable to use everything from an animal out of responsibility, we bring the old recipes back to life. Picanha is a perfect example to do this. You can simply leave the fat cover of the cooked beef and cut the piece into thick slices of steak. The result is what has been served as a “picanha” in South America for decades. An intensely meaty piece that can be grilled on a skewer or simply as a steak.

The tenderloin

The tenderloin is a piece of beef that undoubtedly has a special tenderness and is reserved for special occasions. This fillet from Angus cattle is in fact an absolutely exceptional piece, both in its texture and in the delicate balanced aroma that Angus cattle have.

It is not a piece that you just throw on the grill, but one that must be celebrated and enjoyed with a lot of dedication.

The Withers

In beef, the withers is a large piece of meat – which also contains tendons and parts with a high proportion of connective tissue. For Angus withers steaks, highly marbled parts that do not contain tendons are especially selected – so nothing stands in the way of pleasure as a mini steak. In terms of price, the withers beef steaks from high-class cattle are unparalleled, as they are not considered “high quality steaks”, but due to the high marbling they have an extreme potential for taste.

Goulash

Anyone who cooks goulash should make sure they use very good meat. Ideal for goulash is the brine that contains one of the largest amounts of collagen. This is the part of the muscles that turns into creamy and juicy gelatin, when it is boiled and provides the character of a goulash.
